Recipe - Black Bean Brownies

Today in Columbus it's grey and we're having "freezing rain", which in England is hail, but maybe that's not used here? Are they different things? Anyway, it's gloomy. One of my best friend's Brombley (read his blog here - it's beautiful) messaged me about something he had baked, that was low carb, GF & vegan and told me I HAD to try making them at some point - I figured why wait (especially as I had all the ingredients in my house), so today I also made Black Bean Brownies.



Black Bean Brownies

The recipe itself is from a blog called So Vegan and you can check out all their awesomeness here.

Ingredients


- 1 can Black Beans (240g drained weight)
- 1/2 Avocado
- 1 cup Brown Sugar
- 3 tbsp Cocoa Powder
- 1/2 Walnuts (I actually used Pecans because I prefer them)
- 1 tsp Baking Powder
- 1 tsp Vanilla Extract
- 1 tbsp Coconut Oil (plus a little more for greasing tin)
- large pinch of Salt
- 150g Dark Chocolate (suitable for vegans)




Method


- Preheat oven to 350 and grease a 12 slot muffin tin

- Drain and rinse the beans; then add beans, avocado, sugar, cocoa powder, half the walnuts, baking powder, vanilla extract, coconut oil and salt to a food processor
- Melt 120g of the dark chocolate and then add to the food processor
- Combine ingredients and mix further for 1-2minutes

- Evenly distribute the mixture in the muffin tray
- Cut remaining chocolate into 12 pieces and put one piece in top of each brownie, pushing down gently on each piece of chocolate so that they become submerged
- Finely chop remaining walnuts and sprinkle over the brownies
- Place tray in oven for 20-25 minutes
- Leave to cool completely before gently removing from tin. The longer you leave, the easier they'll be to remove from the tin.



I burnt mine a little, so see below for the professional photos from So Vegan that you're looking for. HA! So, if you're having a grey day too or want a sweet treat to eat on Sunday these guys aren't too terrrrrible for you. I found them a little bit bitter, but I added a spoonful of non-fat Cool Whip for extra sweetness without the extra guilt.
