Recipe - Plum Crisp


I love to follow Nigel Slater on social media as he always does wonderful autumnal & winter recipes. If you're not sure who he is, he is a British chef who has a wonderful way with words. As soon as I saw this online I had to try it as I just love plums. I love any fruit that is sharp/sour, and what is better than a dessert that's like a crumble? Nothing! 

So, today I made his recipe in GF form (although I cut the quantities more than in half for myself as I was the only one home). Here are the results: 

Nigel Slater's Plum Crisp (GF version)

(Serves 6)

Ingredients 

- Ripe Plums (or greengages/damsons) - 1kg
- Ground Cinnamon (a sprinkling)
- Soft Udi's White Bread - 125g 
- Light Brown Sugar - 75g 
- Butter (I actually used Earth Balance Non-Dairy or Soy, Natural spread)- 75g

- Something to serve with eg. Vanilla ice cream, cream or Cool Whip

Method 

- Set the oven to 350 
- Cut the plums in half and remove stones
- Place them in a buttered glass casserole dish and sprinkle lightly some cinnamon on top
- Use a food processor to break up the bread into rough crumbs (make sure they're not too fine)
- Mix the breadcrumbs and the sugar 
- Sprinkle over the top of the plums loosely 
- Melt the butter and pour it over the crumbs, making sure to get them all
- Bake for 35 minutes, 'til the plums are soft and the crumbs are golden and crisp
- Serve with side of your choice

This recipe is taken from Nigel Slater's book The Kitchen Diaries and I have only amended the type of bread & "butter" used to make this recipe gluten free & vegan. Enjoy!
